Nicaragua – La Bastilla NATURAL


Jinotega cooperativa – this strictly high grown coffee is a combination of caturra and catuai varietals, lending to a cup with notes of dark chocolates, blue and black berries, and melon. Naturally processed, we have really enjoyed this seasonal light roast a variety of ways!

We had previously been  roasting up a washed coffee from La Bastilla Estate to a darker level to highlight the profile we thought best suited its unique character. When we were able to find a natural process coming through we had to jump on it!


This roast excursion took us to the light end of the spectrum, with notes of blue and black berries, dark chocolate, and melon popping in.¬† It has been incredible as a batch brew as well as cold brew, and we’re excited to see how it performs as a single origin espresso!
